The Maestà delle Quattro Chiavi farm estate covers approximately 30 hectares on the hills surrounding Bevagna.
On the farm land, olive trees, cereals, vineyards and fruit trees are grown according to organic farming criteria (ICEA control).
THE FIELD OF OLIVE PLANTS
The main activity of the farm consists of an olive grove of about four thousand plants, treated only with organic products, divided between the native Umbrian cultivars Moraiolo, Leccino and Frantoio.
For the particular soil and climatic conditions, for the altitude of about 350m above sea level and for the favorable exposure to the sun of the olive groves, the farm’s land is in fact particularly suited to this type of production.
Our oil is cold extracted, with the use of only mechanical means to ensure its high quality and the maintenance of the precious organoleptic properties.
While respecting the ancient traditions of Umbrian cultivation, the olive trees have been planted according to modern and rational techniques, so as to be able to use machines and tractors for fertilizing, pruning and harvesting.
The olive trees are treated only with organic products, without chemical additives.
Continuous monitoring keeps the health of the plants under control and the agronomist, as soon as the correct state of ripeness of the olives has been assessed, starts the harvest which generally coincides with the middle of October.
The olives, harvested partly by hand for picking and partly with a modern mechanical shaker, are brought to the mill every evening to be immediately processed.
